Ingredients: 1 sack live crawfish 80 quart boiling pot seasoning corn potatoes

Directions:
I use a liquid boil and just a little bit of seasoning in the water , when the water comes to a boil I take out immediately and dump in the ice chest. That’s when I dump my seasoning in on the crawfish, depending on if it’s one sack or two, then I steam cook it in the seasoning for about 15 minutes.
While it’s steam cooking I am draining the water to make sure the crawfish do not get soggy sitting in juice. I cook the vegetables in a separate pot to accommodate the people who are allergic to shellfish but love the flavor of a boil . Typically cook , corn , potatoes 🥔, first then as the potatoes are close I cut off the boiling water and add mushrooms and green beans, let them steam cook for a few minutes because the green beans will get soggy if they are in too long.
Then I dump the vegetables in a separate ice chest and I’m done. I do cook pineapples but whole pineapples in the seasoned boil . I poke holes all over the pineapples and set them in the water. Boil for 15 to 20 minutes and then stop the boil and then let them soak for another 20 to 30 minutes. Then after everyone has pretty done eating the crawfish and vegetables,
I cut up the pineapple and serve it just like it is, the combination between the sweet and spicy of the pineapples calm down the spicyness of crawfish and vegetables. It’s always a fun time
